Mas de Daumas Gassac

Mas de Daumas Gassac White 2025

Best enjoyed young (within 2 to 3 years) to appreciate its magnificent aromatic palette. It can also be stored for 5 to 15 years (under optimal storage conditions) to reveal subtle notes of honey and candied fruit.
Unforgettable as an aperitif, it is best enjoyed between 42°F and 46°F, or decanted an hour in advance.
It pairs beautifully with oysters au gratin, pan-fried foie gras, risotto, or scallops with cream and citrus fruits.

CLIMATE:

The 2025 vintage was born from a near-perfect year, where each season played its part to perfection. The cold, structuring winter prepared the soil, while a cool spring, spared from frost and generous in rainfall, slowly replenished the deep reserves of the Gassac Valley.
Summer then arrived with bright, sustained sunshine, warm without being excessive, leaving little room for rainfall. This intense light guided the vines towards serene and precise ripening, requiring constant attention and great patience from the winemaker to preserve the freshness, balance, and tension of the fruit.

HARVEST

Starting on August 26 and with multiple breaks throughout the month to allow the grapes to reach perfect ripeness, this 15-day harvest was spread out over a month time, ending on September 20, just before the Equinoxes storm.
Around 100 people made this year’s joyful harvest team! Pickers from all over the world, in addition to the entire Daumas Gassac’s team harvested over 60 plots of vines for this 48th Mas de Daumas Gassac’s vintage.

TASTING HINTS

Best if served between 11°C and 12°C.

Open the bottle an hour before serving, but always replace the cork. Decanting encourages wines to express their full complexity but, always replace the stopper.
To be drunk young (in the first 18 months) to appreciate its magnificent minerality and very complex fruit aromas. Alternatively, to be kept at least from 4 to 12 years to discover a very rich wine with notes of honey and crystallized fruits.
Delicious by itself as an aperitif or with oysters, foie gras or any grilled fish.
A truly unique experience!

The two lives of Mas de Daumas Gassac White Wine

Laid down in a cool cellar (14°-16°C, 57-60°F) even the oldest can happily wait with no problem for many years. However, being laid down in warmer temperatures will speed up the wines’ maturity.

First life

To taste within the first three years if you appreciate wonderful fruity flavours.
Drink our white wines as an aperitif or with a meal. They drink beautifully with most dishes.

Second life

Quite a different wine from the third or fourth year! Its youthful fruitiness will have disappeared, to be replaced by new flavours reminiscent of “sherry” or old “Sauternes”, a touch “oxidative” with great finesse.
Take care: if you are not looking for this type of wine, slightly paradoxical as it ages, drink our white wines within the first couple of years.
