elementor-size-default\">Terroir<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-2b69107 elementor-widget elementor-widget-text-editor\" data-id=\"2b69107\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Most important of all is Mas de Daumas Gassac\u2019s exceptional terroir, discovered in the 1970s by the geographer and professor, Henri Enjalbert. Occupying the chair of geography at the Academy of Bordeaux (he died in 1983 having completed his monumental book on Saint Emilion), he discovered, in the middle of the Arboussas Massif, under the thick mantle of the garrigue, 40 hectares (100 acres) of deep, perfectly drained soil, rich in mineral oxides (iron, copper, gold, etc) and poor in humus and plant matter.<\/p><p>He immediately saw a similarity between this soil and that of the finest terroirs of the C\u00f4te d\u2019Or in Burgundy.<\/p><p>This terroir of glacial sandstone accumulated by winds during the Riss, Mindel and Guntz glaciations provides three essential elements for the production of a grand vin:<\/p><p>deep soil in which the vines\u2019 roots can find nourishment deep below the surface;<br \/>well-drained soil in which the vines\u2019 roots will never become water-logged;<br \/>poor soil requiring effort from the vines and causing them stress but resulting in superb flavours.<\/p><p>Henri Enjalbert\u2019s notes and drawings were reproduced in a remarkable book published in 1985 called \u201cUn Vignoble de Qualit\u00e9 en Languedoc\u201d.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-4e24214 e-flex e-con-boxed e-con e-parent\" data-id=\"4e24214\" data-element_type=\"container\" data-e-type=\"container\" data-settings=\"{&quot;background_background&quot;:&quot;classic&quot;}\">\n\t\t\t\t\t<div class=\"e-con-inner\">\n\t\t\t\t<div class=\"elementor-element elementor-element-d880b9b elementor-widget elementor-widget-spacer\" data-id=\"d880b9b\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"spacer.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t<div class=\"elementor-spacer\">\n\t\t\t<div class=\"elementor-spacer-inner\"><\/div>\n\t\t<\/div>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-a3287ee e-flex e-con-boxed e-con e-parent\" data-id=\"a3287ee\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t\t<div class=\"e-con-inner\">\n\t\t<div class=\"elementor-element elementor-element-3886fc8 e-con-full e-flex e-con e-parent\" data-id=\"3886fc8\" data-element_type=\"container\" data-e-type=\"container\" data-settings=\"{&quot;background_background&quot;:&quot;classic&quot;}\">\n\t\t\t\t<div class=\"elementor-element elementor-element-f70f489 elementor-widget elementor-widget-spacer\" data-id=\"f70f489\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"spacer.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t<div class=\"elementor-spacer\">\n\t\t\t<div class=\"elementor-spacer-inner\"><\/div>\n\t\t<\/div>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-d16aeaf e-flex e-con-boxed e-con e-parent\" data-id=\"d16aeaf\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t\t<div class=\"e-con-inner\">\n\t\t\t\t<div class=\"elementor-element elementor-element-db770fa elementor-widget elementor-widget-heading\" data-id=\"db770fa\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">A cold microclimate with beneficial effects<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-f0314be elementor-widget elementor-widget-text-editor\" data-id=\"f0314be\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>It is difficult for a great terroir to express itself in a hot climate: all of the legendary wines (Bordeaux, Champagne, Burgundy) are produced in northerly vineyards. The Upper Gassac Valley, the cradle for this exceptional terroir, also benefits from a cold microclimate that corresponds to an altitude of about 500 metres. At night, cold air flows down from the Larzac plateau (850 metres) into the Upper Gassac Valley, keeping the vines cool at night even in the middle of the summer.<\/p><p>The vineyard\u2019s exposure on north-facing slopes accentuates the microclimate\u2019s effect by reducing the hours of sunshine, especially in the summer. While this microclimate delays the vines\u2019 flowering by about three weeks compared to the average in the Languedoc, thereby delaying the harvests of the red grapes, it is also responsible for the remarkable complexity and finesse of Mas de Daumas Gassac\u2019s wines, and the extremely rare balance of three elements \u2013 alcohol, polyphenols and acidity \u2013 that is found in exceptional wines.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-0d6a6db e-con-full e-flex e-con e-parent\" data-id=\"0d6a6db\" data-element_type=\"container\" data-e-type=\"container\" id=\"cepage\">\n\t\t<div class=\"elementor-element elementor-element-2737c9f e-flex e-con-boxed e-con e-parent\" data-id=\"2737c9f\" data-element_type=\"container\" data-e-type=\"container\" data-settings=\"{&quot;background_background&quot;:&quot;classic&quot;}\">\n\t\t\t\t\t<div class=\"e-con-inner\">\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-261b0da e-con-full e-flex e-con e-parent\" data-id=\"261b0da\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t<div class=\"elementor-element elementor-element-2b2ffe7 elementor-widget elementor-widget-heading\" data-id=\"2b2ffe7\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Grape varieties<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-36ae756 elementor-widget elementor-widget-text-editor\" data-id=\"36ae756\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>We have planted old un-cloned varieties that have low yields but offer exceptional organoleptic richness.<br \/>As a result, our vineyard has become a museum of grape varieties. A remarkable story to discover\u2026<\/strong><\/p><p>In the 1950s, agriculture was taken over by an \u201cindustrial\u201d approach. In the vineyard, clonal selection became standard: compared to past centuries, yields doubled, and the originality of the flavours tended to disappear.<\/p><p>At Mas de Daumas Gassac, we refused the clones: we planted old varieties with low yields. In this way, the vineyard has become something of a museum, illustrating what varieties such as Cabernet-Sauvignon, Petit Manseng and Viognier were like in the past. Before modern clones: low yields but tremendous organoleptic richness.<\/p><p>\u201cCloning changed yields, at least doubling them. We went from an exceptional product with a great aromatic intensity to an overabundant one, lacking in any flavours except those that are added artificially. We have kept the names of the grape varieties, but by cloning them, they have lost their diversity, their aromatic qualities\u2026 their personalities.\u201d<\/p><p><strong>Aim\u00e9 Guibert<\/strong><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-d1c6bf2 e-flex e-con-boxed e-con e-parent\" data-id=\"d1c6bf2\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t\t<div class=\"e-con-inner\">\n\t\t<div class=\"elementor-element elementor-element-fdefc00 e-con-full e-flex e-con e-parent\" data-id=\"fdefc00\" data-element_type=\"container\" data-e-type=\"container\" data-settings=\"{&quot;background_background&quot;:&quot;classic&quot;}\">\n\t\t\t\t<div class=\"elementor-element elementor-element-b209dd0 elementor-widget elementor-widget-spacer\" data-id=\"b209dd0\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"spacer.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t<div class=\"elementor-spacer\">\n\t\t\t<div class=\"elementor-spacer-inner\"><\/div>\n\t\t<\/div>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-e71d15d e-flex e-con-boxed e-con e-parent\" data-id=\"e71d15d\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t\t<div class=\"e-con-inner\">\n\t\t\t\t<div class=\"elementor-element elementor-element-07f1c51 elementor-widget elementor-widget-heading\" data-id=\"07f1c51\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">Low yields: a tradition in times past!<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-9cfb156 elementor-widget elementor-widget-text-editor\" data-id=\"9cfb156\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>35 to 40 hectolitres per hectare. That means three to six thousand kilos of grapes per hectare, corresponding to one square metre for each glass of wine, and hence to a strong expression of the terroir.<\/p><p>These are modest yields when compared to the twenty to thirty thousand kilos of grapes per hectare that are harvested in the production of industrial wines.<\/p><p>Following the collapse of the glove-making trade, Aim\u00e9 Guibert made a series of journeys to say goodbye to all the people he had worked with in the northern Mediterranean region. He took advantage of these occasions to ask, as a souvenir of their collaboration, for a cutting from their favourite vines, or those grown by friends, neighbours and families, each of which represented a period glory in a different region of the world\u2026 And so, it was that Aim\u00e9\u2019s precious collection of varieties grew through such encounters and a constant search for authenticity. A collection of which the Gassac valley is now the guardian, and with reason: of the property\u2019s 50 varieties, 25 are unknown to the general public and can truly be said to belong to history!<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-8ca583a e-flex e-con-boxed e-con e-parent\" data-id=\"8ca583a\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t\t<div class=\"e-con-inner\">\n\t\t<div class=\"elementor-element elementor-element-4f79a80 e-con-full e-flex e-con e-parent\" data-id=\"4f79a80\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t<div class=\"elementor-element elementor-element-fa84278 elementor-widget elementor-widget-heading\" data-id=\"fa84278\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">Red grape varieties<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-52c8385 elementor-widget elementor-widget-text-editor\" data-id=\"52c8385\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Most of the vineyard consists of the \u201cking\u201d, Cabernet Sauvignon, in uncloned form (as it grew in the M\u00e9doc before 1914).<\/p><p>Advised by their friend Mr Boubals (a professor of viticulture at Montpellier University and director of the National School of Viticulture) Aim\u00e9 and V\u00e9ronique Guibert obtained cuttings from vines dating from the 1930s and 40s from around a hundred of the best properties in the Bordeaux and Lot-et-Garonne region.<\/p><p>In 1972, 17,500 uncloned Cabernet Sauvignon vines were thus grafted onto American rootstock. Cuttings collected by Aim\u00e9 from properties in their respective regions:<\/p><p>Viognier from the Rh\u00f4ne: cuttings from the iconic Domaine Georges Vernay \u2013 Condrieu.<br \/>Petit Manseng from the Pyrenees: Domaine Charles Hours \u2013 B\u00e9arn, Juran\u00e7on Grands Vins<br \/>Chenin from the Loire: Domaine Huet \u2013 Vouvray.<br \/>Chardonnay from Burgundy: Domaine des Comtes Lafon.<\/p><p>Note that while these four varieties account for 90% of the white wine, the remaining 10% comes from fourteen glorious, rare varieties.
